Deleting keys puts you in setup mode, and once you're there you can enrol any keys that you want. Secure boot is not intended to protect against physical attack. While you won't be able to re-sign your option roms you will be able to enrol their hashes and skip the PKI part of the spec. So you've got several of the technical details wrong, which may influence the rest of your conclusions.
