You'll need to generate a signing key, sign the file that's currently BOOTX64.efi with it, rename that file to grubx64.efi, copy shim.efi to EFI/BOOT/BOOTX64.efi, copy MokManager.efi to EFI/BOOT and put the public key you used to sign grubx64.efi in the same directory. The exact details of how you do this will depend on what kind of signing you want to do, but if you download sbsigntool you ought to be able to figure it out.
