If I am not mistaken, you can also create an MBR partition table that mirrors the information of the GPT partition table. This way, both partition tables will point to the same partitions in the disk. These partition tables do not overlap each other, allowing compatibility with the old BIOS and the new EFI at the same time. I don't know if this somehow violates the EFI specification though. I believe parted already does this!
